Dairy-Free Chocolate Chip Cookies

Ingredients

  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup vegetable or canola oil
  • 1/2 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 3 tsp vanilla extract
  • 2 cups dairy-free semi-sweet chocolate chips (if no dairy allergy, may substitute with other chocolate chips)

Instructions

  • Preheat oven to 350F degrees. Line baking sheets with parchment paper for easy clean up; set aside.
  • Combine flour, baking soda and salt into a medium-sized bowl. Whisk or sift all ingredients together and set aside.
  • In a large bowl, stir oil and both sugars together with a spoon or whisk.
  • Add eggs one at a time, mixing completely after each addition.
  • Stir in the vanilla extract.
  • Add the flour mixture all at once to the wet ingredients. Mix with a wooden spoon until combined.
  • Stir in the chocolate chips.
  • Use a cookie scoop or spoon to drop rounded cookies onto prepared cookie sheets.
  • Bake at 350F degrees for about 8-9 minutes.
  • Cool before removing from cookie sheets.
  • Wrap in cute cellophane bags for gift giving or store in an airtight container.
