Looking for an after school treat? Then look no further. What better way to get kids in the kitchen than with a simple and easy recipe. The hardest part is waiting for these bites to firm up in the refrigerator.
No Baking Required
What’s nice about this energy bite recipe, besides the fact that there’s no actual baking required, is that you can probably find all four ingredients in your pantry. Yes, I said four ingredients. If you have something else you’d like to add, like flaxseed, feel free to add it in. This is a great recipe to experiment with additional items.
I make these as a nut-free treat, so I use Sun Butter. It packs as much protein as peanut butter and tastes great. If you don’t need to worry about allergies, just substitute peanut butter or any nut butter of your choice.
I hope you and your helpers enjoy this snack as much as we do. Let me know what you think and if you made any additions to the recipe. Happy Snacking!
Nut-Free Energy Bites
Ingredients
- 1 cup oatmeal
- 1/2 cup sun butter
- 1/3 cup maple syrup or honey
- 1/2 cup mini chocolate chips
Instructions
- Measure out your ingredients* and combine into a medium-sized bowl.
- Mix all four ingredients together and then place the bowl into the refrigerator.
- Chill mixture for 15 minutes or until slightly firm.
- Remove from refrigerator and make into bite-sized balls.
I used a cookie scoop so I would have a uniform shape and consistent size. - Place each bite onto a cookie sheet lined with parchment paper and refrigerate until firm, about 30 minutes.
- Once firm, you are free to snack!
Place any leftovers in a container and store in the refrigerator.
