Peel, core and chop apples into bite-sized pieces.
Place into a saucepan. Pour lemon juice on top of the apples and stir.
Add sugar, cinnamon, allspice and salt to the apples.
Cover the saucepan. Cook on medium heat until apples are simmering, about 5 minutes.
While the apples are cooking, create your slurry by adding the cold water to the cornstarch. Stir until smooth.
Pour over the apples. This will thicken the apples.
Stir over medium-high heat until the mixture thickens and the liquid is bubbling.
Once boiling, stir and cook for about 1 minute.
Remove from heat and cool.
