- 2 cups whole wheat flour
- 1/2 cup all-purpose flour
- 1/2 cup quick oats oatmeal
- 1 tbsp wheat germ (optional)
- 1/4 tsp salt
- 1 large egg
- 1/2 cup pure pumpkin
- 1/2 cups water plus 2 tbsp extra, if needed
In a large bowl, whisk together the flours, oatmeal, wheat germ (if using), and salt. Set aside.
Using a hand or stand mixer, combine the egg and pumpkin until smooth.
With the mixer speed on low, alternate the flour mixture and water. Start with the flour mixture then add the water 1 tbsp at a time until the dough becomes sticky.
Roll the dough out on a lightly floured surface. Roll the dough into a 12 x 11 sheet, keeping the dough about ¼ inch thick.
Use a bone-shaped cookie cutter to cut out the biscuits.
Place the cut biscuits onto a baking sheet lined with parchment paper. Bake at 300°F for about 90 minutes or until the biscuits feel firm to the touch.
Cool on a wire rack. Once cooled completely, store biscuits in an airtight container or wrap them in cute gift bags to share.
