Ingredients

  • 2 cups whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/2 cup quick oats oatmeal
  • 1 tbsp wheat germ (optional)
  • 1/4 tsp salt
  • 1 large egg
  • 1/2 cup pure pumpkin
  • 1/2 cups water plus 2 tbsp extra, if needed

Instructions

  • In a large bowl, whisk together the flours, oatmeal, wheat germ (if using), and salt. Set aside.
  • Using a hand or stand mixer, combine the egg and pumpkin until smooth.
  • With the mixer speed on low, alternate the flour mixture and water. Start with the flour mixture then add the water 1 tbsp at a time until the dough becomes sticky.
  • Roll the dough out on a lightly floured surface. Roll the dough into a 12 x 11 sheet, keeping the dough about ¼ inch thick.
  • Use a bone-shaped cookie cutter to cut out the biscuits.
  • Place the cut biscuits onto a baking sheet lined with parchment paper. Bake at 300°F for about 90 minutes or until the biscuits feel firm to the touch.
  • Cool on a wire rack. Once cooled completely, store biscuits in an airtight container or wrap them in cute gift bags to share.
