Quick & Easy Lucky Charms Marshmallow Bars

Ingredients

  • 4 tbsp (57g) butter
  • 6 cups (275g) mini marshmallows reserve 1 cup (47g)
  • 6 cups (216g) Lucky Charms cereal reserve some marshmallows
  • 1 cup (190g) white chocolate chips
  • 2 tsp (10g) vanilla extract
  • 1-2 drops green food coloring optional

Instructions

  • Line your 8x8 baking pan with parchment (or grease the pan lightly). Set aside.
  • In a large microwave-safe bowl, melt the butter, about 10-15 seconds.
  • Add marshmallows to the bowl and coat with the butter. Place the bowl in the microwave and melt in 15-30 second intervals. Stir in between each interval until smooth and completely melted.
  • If you choose to color the treats with green food coloring, add a drop and stir.
  • Add in the cereal, white chocolate chips, vanilla and the 1 cup extra marshmallows and stir until completely coated.
  • Spread the cereal mixture into the pan.
  • Coat your spatula with cooking spray or lightly wet your hands and gently press the mixture down into the pan without pushing it down too hard.
  • Add the extra Lucky Charms marshmallows on top and press into the mixture. Be sure to make the top look as even as possible.
  • Cover with plastic wrap and let the mixture cool completely before cutting into bars, about 1-2 hours.
  • Once cooled, remove from the pan and place on a cutting board. Cut into 12 bars.
  • Recipe yields more or less, depending on how large or small bars are cut.
  • Cover and store at room temperature for up to 3 days or freeze for up to 3 months.
