Robin Egg Rice Krispie Treats

Ingredients

  • 2 tbsp (25g) butter
  • 1 cup (164g) mini marshmallows
  • 3 cups (91g) rice cereal
  • 1/2 cup (70g) Robin Egg candy, crushed
  • 1 tsp (5g) vanilla
  • extra Robin Egg candy for the tops (optional)

Instructions

  • Line an 8x8 pan with parchment paper or spray with cooking spray; set aside.
  • Place butter and marshmallows into a large microwave-safe bowl. Microwave in 15-30 second intervals, stirring in between each, until smooth.
  • Add cereal, crushed candy and vanilla to the bowl. Carefully mix until incorporated.
  • Pour mixture into the prepared pan. With damp hands (or spray hands with cooking spray) press mixture into the pan.
  • Optional: add extra crushed Robin Egg candy on the top of the treats and lightly press them down into the mixture.
  • Let cool at room temperature for about 30 minutes.
  • Once cooled, remove from the pan and cut into 2” squares. Or, take an egg-shaped cookie cutter and cut into shapes for a festive touch.
  • Wrap and store on the counter for up to two days or freeze for up to six weeks.
