Sweet Potato Biscuits

Ingredients

  • 1 cup sweet potato, peeled, cooked & mashed
  • 2 cups whole wheat flour
  • 1 cup oatmeal, quick oats
  • 1/4 tsp salt
  • 2 tbsp canola or coconut oil
  • 1 large egg
  • 1/2-2/3 cups water

Instructions

  • Preheat oven to 325F degrees. Line cookie sheet with parchment paper and set aside.
  • Cook sweet potato in microwave or in boiling water for 25 minutes. Cool, peel and mash.
  • In a bowl, mix whole wheat flour, oatmeal and salt together. Set aside.
  • In mixing bowl, combine mashed sweet potato, egg and canola or coconut oil. Beat until smooth.
  • Add the flour mixture and water, beating after each addition. Continue until all water is used and you have a smooth dough.
  • Put dough onto a lightly floured surface and knead a few times.
  • Roll dough to about ½” thickness. Cut into bone shape.
  • Place onto parchment-lined cookie sheet and bake at 325F for about 1 hour and 10 minutes.
  • Cool on wire rack. Store in a container.
