Preheat oven to 325F degrees. Line cookie sheet with parchment paper and set aside.
Cook sweet potato in microwave or in boiling water for 25 minutes. Cool, peel and mash.
In a bowl, mix whole wheat flour, oatmeal and salt together. Set aside.
In mixing bowl, combine mashed sweet potato, egg and canola or coconut oil. Beat until smooth.
Add the flour mixture and water, beating after each addition. Continue until all water is used and you have a smooth dough.
Put dough onto a lightly floured surface and knead a few times.
Roll dough to about ½” thickness. Cut into bone shape.
Place onto parchment-lined cookie sheet and bake at 325F for about 1 hour and 10 minutes.
Cool on wire rack. Store in a container.
