Ingredients You’ll Need (and Why)

All-Purpose Flour: flour gives cake its structure. Be sure to spoon the flour into a measuring cup and level it off with a straight edge. Scooping flour directly from the bag packs it down, possibly resulting in more flour than what’s needed, making the cake dry or dense.

Sugar: granulated sugar gives the right amount of sweetness and helps make the cake tender.

Cocoa Powder: unsweetened cocoa powder gives a rich, deep chocolate flavor.

Baking Powder: baking powder helps give this cake a little bit of lift to help keep the texture light and fluffy.

Salt: salt helps to enhance the flavors and balances out the sweetness.

Banana: a ripe banana adds natural sweetness and moisture to the cake. The riper the banana, the sweeter the cake.

Whole Milk: ideal in baked goods, whole milk is preferred since it has a higher fat content and makes for a more tender cake.

Vegetable or Canola Oil: since vegetable and canola oil have a neutral flavor, either oil is fine to use. Oil helps keep the cake moist and tender.

Vanilla Extract: vanilla adds a warm flavor to the cake.

Chocolate Chips: while optional, you can never go wrong with more chocolate. A sprinkle of chocolate chips on top of the mug cake adds an extra rich chocolatey finish.

Helpful Baking Tools

12-Ounce Mug: a large, microwavable mug is preferred so the cake doesn’t spill over the top as the cake rises.

Mixing Bowl & Ramekins: gather ingredients in small ramekins and mix wet ingredients in a small bowl before adding to the mug to prevent overmixing.

Measuring Spoons: you’ll only need measuring spoons to measure ingredients. Or, weigh ingredients with a kitchen scale

Small Whisk or Fork: use a small whisk or fork to mix the batter together.

Oven Mitt: protect hands with an oven mitt when removing the hot mug from the microwave.

Mug Cake Tips

While making a microwave mug cake is relatively easy, here are some helpful tips to make sure yours turns out light, fluffy and delicious every time.

  1. Choose the right mug. Use a microwave-safe mug that holds at least 12 ounces. A mug cake will rise while cooking and you do not want it spilling over the sides.
  2. Use a ripe, mashed banana. The riper the banana, the sweeter your cake will taste. A banana with plenty of brown spots on the peel is ideal. Use a fork to mash the banana well, as a lumpy banana can create uneven pockets in the batter.
  3. Whisk dry ingredients first. Mix the dry ingredients together before adding the liquid ingredients. This prevents pockets of flour or cocoa powder sitting unmixed at the bottom of the mug.
  4. Mix ingredients until just combined. Once you’ve added the wet ingredients, stir until the batter is just combined. Overmixing ingredients leads to a tougher, chewier cake texture versus a soft one.
  5. Know your microwave. Most home microwaves run between 900 and 1200 watts. If yours runs on the lower end, you may need a few extra seconds of cook time. When in doubt, check at 60 seconds and go from there.
  6. Don’t overbake your cake. The cake is done when the top looks mostly set with a small spot in the center that still looks slightly glistening. That spot will finish cooking from residual heat as the cake sits.
  7. Let the cake rest. Let your mug cake sit or rest for 1 to 2 minutes. This gives the cake time to finish baking through residual heat and cools it down enough for you to add toppings, if desired.

Variations to Chocolate Banana Mug Cake

One of the best things about a mug cake recipe is how easy it is to customize. Whether you need to accommodate dietary preferences or just want to mix things up, here are some ideas to make it work for your dietary needs or preferences. If making an allergen/dietary substitution, try one swap at a time to ensure the best results. Note that I have not tested this recipe with these variations/substitutions, so if you try any of these, please let us know how it turned out in the comments below.

  • Double Chocolate Dream: stir in a tablespoon of chocolate chips directly into the batter before microwaving for a gooey, chocolatey center.
  • Mocha Magic: add a half teaspoon of instant espresso powder to the dry ingredients. Not only does this add a subtle coffee flavor, but it brings out the chocolate flavor, too.
  • Cozy Cinnamon Spice: stir ¼ teaspoon of cinnamon into the dry ingredients and add ½ to 1 tablespoon cinnamon baking chips into the batter before microwaving for a warm spiced twist.
  • Sunflower Swirl: stir in 1 to 2 teaspoons of sunflower seed butter into the batter for a chocolate, banana and sunflower seed butter combo.
  • Dairy-Free: replace the whole milk with any unsweetened non-dairy milk, such as oat milk, and use dairy-free chocolate chips on top.
  • Gluten-Free: replace the all-purpose flour with a gluten-free flour blend, like Cup4Cup Multipurpose Gluten-Free Flour, for a one-to-one swap.

Storing Leftover Mug Cake

Mug cakes are best enjoyed immediately, while they are still warm and at their fluffiest. However, here are storage tips in case you have leftovers. Do not freeze, as the texture changes after thawing. It is best to make them fresh.

  • At Room Temperature. Cover the mug loosely with plastic wrap and store at room temperature for up to one day. Be aware that the texture may become denser as it sits.
  • In the Fridge. Cover and refrigerate any leftover mug cake for up to two days. To rewarm, microwave for 15 to 20 seconds until just heated through.

Frequently Asked Questions About Mug Cakes

A mug cake is a single-serving cake that is mixed and cooked in a mug using a microwave. It requires no oven and comes together in just a few minutes, making it one of the easiest treats a beginner baker can make.

The most common reason is overbaking the mug cake. Microwaves vary in power, so start checking your cake at the 60-second mark. It should look mostly set with a slightly glistening center. It will continue cooking as it rests.

Yes. If you do not have a banana on hand or prefer to leave it out, substitute the mashed banana with an equal amount of unsweetened applesauce. The flavor will be different but the texture will still be soft and moist.

Your mug cake is done when the top looks mostly set with a small glistening spot in the center. That spot is intentional and will finish cooking from residual heat as the cake rests. If the entire top still looks wet, give it another 10 to 15 seconds in the microwave. You can also test if the mug cake is done by inserting a toothpick into the center of the cake. It should come out with just a few moist crumbs attached rather than wet batter.

No. I do not recommend doubling the batter in a single mug since it needs room to rise while cooking. For two servings, make two separate mug cakes.
