Ingredient Line-Up

Butter – not only does butter add richness and flavor, it also keeps the treats from becoming too sticky or hard.

Marshmallows – mini marshmallows hold everything together, making the treats soft and gooey.

Lucky Charms Cereal – not only are the treats colorful, the cereal adds a delightful crunch. You can use either the brand name cereal or generic – either works well.

White Chocolate Chips – add additional flavor and texture.

Vanilla – adds a cozy, vanilla sweetness to the treats.

Food Coloring – optional, but a small touch of green adds a festive St. Patrick’s Day touch to your treats.

Baking Tools Needed

Pan – use an 8×8” baking pan to place the Lucky Charms mixture into while they cool. For easier removal, line your pan with parchment paper

Measuring Cups and Spoons – easily measure your ingredients with measuring cups and measuring spoons. Or, use a kitchen scale and weigh ingredients.

Mixing Bowls – use mixing bowls to gather the dry ingredients and use a large microwave-safe bowl to melt/stir the cereal mixture.

Spatula and/or Spoon – use a silicone spatula or wooden spoon to mix and stir everything.

Cutting Board – use a cutting board to cut the bars.

Knife – use a knife to cut the bars or for little bakers, use kid-safe nylon knives.

Tips for Making the Best Lucky Charms Marshmallow Bars

Making these Quick & Easy Lucky Charms Marshmallow Bars is simple, but a few helpful tips will make the process go smoother and the end results will be even tastier.

  1. Use fresh marshmallows. Stale marshmallows don’t melt as smoothly and can lead to tough, less gooey bars. Always use a fresh bag.
  2. Don’t overheat the marshmallow mixture. Overheating the marshmallows can make the treats too hard. Microwave in 15-30 second intervals, stirring in between each interval, until they are smooth and fully melted.
  3. Reserve some marshmallows for the top. Before mixing, set aside a handful of Lucky Charms marshmallows. Press them onto the bars while they’re still warm for extra color and crunch.
  4. Mix the mixture thoroughly. Be sure to mix the cereal mixture thoroughly to ensure every piece of cereal or chip is covered in the marshmallowing goodness.
  5. Grease your baking tools. Use cooking spray on your spatula and/or wooden spoon to keep the marshmallow mixture from sticking.
  6. Wet your hands. If you press the mixture into the pan with your hands, be sure to wet them with water first to prevent the cereal mixture from sticking.
  7. Use a light touch when pressing the mixture. If you press the mixture too firmly, the bars can become dense instead of soft and chewy.
  8. Cool treats at room temperature. Allow the bars to cool at room temperature for at least an hour before cutting to get clean, even slices.
