S’mores Rice Krispies – A Twist on a Classic

Who doesn’t love a classic S’more? With those gooey marshmallows, crispy graham crackers, and melty chocolate, it makes for the perfect treat. And, speaking of classics, who doesn’t love the classic Rice Krispies treat? But, what if you put the two together. Doesn’t that sound like the perfect combination?

A Classic Treat With a Twist

S’mores Rice Krispies takes the best parts of a S’more and combines them with the classic Rice Krispies to create a perfect blend of gooey, crunchy, and chocolatey goodness. They’re easy to make, customizable, and perfect for any occasion. So, let’s take both of these classic treats and give it a twist, allowing you to enjoy that S’mores taste without the hassle of a campfire.

Ingredient Line-Up

Rice Cereal – provides the crunch texture to the Rice Krispies Treats; you can use either a name brand or generic version of cereal.

Graham Crackers – adds the traditional S’mores flavor. Crush the graham crackers by hand, leaving some larger pieces for added texture. 

Chocolate – adding chocolate gives a rich flavor to these treats. While this recipe uses both a chocolate bar and chocolate chips, you can use one over the other. And, you can add more or less based on your taste preferences.

Marshmallows – provides the gooey sweetness and chewy texture. Be sure to save some extras for the top.

Butter – binds the ingredients together and adds a creamy texture. I prefer unsalted butter, but either salted or unsalted butter works for this recipe.

Vanilla – enhances the overall flavor of the Rice Krispies treat.

Tools Needed

Baking Pan – use an 8″ baking pan for nicely shaped treats (a larger pan will produce a thinner treat).

Kitchen Scale – a kitchen scale can be used to weigh ingredients; however measuring cups work fine, too.

Measuring Cups and Spoons – measure ingredients using dry measuring cups. If using vanilla, use measuring spoons.

Mixing Bowl – use a large bowl to combine all ingredients together. 

Parchment Paper – optional, but parchment paper can be used to line the bottom of the baking pan so the treats are easily removable. Cooking spray can be used instead.

Pot – a medium-sized pot is needed to melt the butter and marshmallows.

Spatula or Spoon – a heat-resistant spatula or wooden spoon can be used to mix all ingredients together and to spread the mixture in the pan.

Ziploc Bags – optional, but Ziploc bags are great for crushing graham crackers or placing the melted chocolate into for drizzling.

S’mores Rice Krispies Treats

A S’mores Rice Krispies treat combines the classic flavors and textures of a traditional S’more with the familiar and comforting Rice Krispie treat. This delicious twist has the right combination of crunchy cereal, gooey marshmallows, and chocolatey goodness that creates a unique treat that is not only nostalgic, but also indulgent.

S'mores Rice Krispies Treats

Ingredients

  • 4 cups (130 grams) rice cereal
  • 2 cups (125 grams) graham crackers (broken/crushed)
  • 1 bar (43 grams) chocolate bar
  • 1/2 cup (94 grams) semi-sweet chocolate chips (optional - can use two bars of chocolate instead)
  • 1 bag (283 grams) mini marshmallows
  • 1/2 cup (43 grams) extra mini marshmallows (reserve 1/4 cup for the top) (dehydrated mini marshmallows can be used instead)
  • 1/4 cup (57 grams) butter
  • 1/4 cup almond bark, melted (use more or less based on your preference)

Instructions

  • Line the bottom of an 8x8" baking pan with parchment paper or spray with cooking spray. Set aside.
  • Place graham crackers into a Ziploc bag and crush into small pieces.
  • In a large bowl, add the rice cereal, crushed graham crackers, chocolate and ¼ cup of mini marshmallows together. Use a spoon to stir together; set aside.
  • Add the butter to a medium-sized pot. Over low to medium heat, melt the butter. Once melted, remove from heat.
  • Add 10 ounces (1 bag) of mini marshmallows to the pot. Place back on the stove and melt over low heat, stirring until fully melted. Remove from heat.
  • Add vanilla to marshmallow mixture and stir.
  • Pour the melted marshmallows over the dry mixture (the cereal, graham crackers, chocolate and extra marshmallows). Stir to combine.
  • Drop this mixture into your pan and add the remaining ¼ cup marshmallows to the top. Spray hands with cooking spray (or wet hands lightly with water) and press the mixture down into the pan.
  • Melt about ¼ cup of almond bark (about 2 blocks of chocolate) in a microwavable bowl at 50% power for about 30 seconds until melted.
  • Place melted chocolate into a pastry bag (or Ziploc bag), cut a small corner off and drizzle across the top of the S’mores Rice Krispies. Optional – add some dehydrated mini marshmallows on top of the chocolate drizzle.
  • Chill treats in the fridge for about 10 minutes before cutting. Store in a container.

Perfect for Any Occasion

Satisfy your sweet tooth with these S’mores Rice Krispies Treats. They are easy to make and perfect for any occasion. With a few simple tips, you can create the perfect treat every time.

  • Balance the Sweetness – adding a pinch of salt will help balance out the sweetness of the marshmallows and chocolate.
  • Intensify the Flavor – for a more intense S’mores flavor, try toasting the marshmallows slightly before adding them to the mixture. Or, top the entire S’mores Rice Krispies with  marshmallows before cutting and use a kitchen torch or the broiler to toast the marshmallows. Cool completely before cutting.
  • Make Individual Treats – make individual S’mores Rice Krispies by pressing the mixture into a muffin tin. Be sure to top each with mini marshmallows and chocolate chips or drizzle.
  • Store Treats Properly – Store S’mores Rice Krispies in an air-tight container at room temperature for up to three days or in the refrigerator for up to one week. S’mores Rice Krispies Treats can be made ahead of time.
