These cookie butter and banana popsicles are easy to make and great for a hot day. Add in honey for sweetness and chocolate chips for a little something extra. It’s a great, quick way to cool down on a hot day. Kids (and adults) will love these.
Who Doesn’t Love Cookie Butter?
How did this flavor combination come about? When I was snacking on spoonfuls of cookie butter with my banana, I thought, why not put these together and freeze it for a cool, refreshing treat? And so I did. And it was so, so good!
What I like about cookie butter and banana popsicles is that the cookie butter flavor is slightly different when frozen…it almost has a coffee taste to it. And you can toss in other ingredients if you want too. We used honey as our sweetener and then added chocolate chips to half of our popsicle batch. Just stir those in at the end and pour into your mold.
Cookie Butter & Banana Popsicles
Equipment
- immersion blender
Ingredients
- 1/4 cup cookie butter
- 1 banana, cut into chunks
- 1-2 tbsp honey (use more or less, as desired)
- 1-2 tbsp chocolate chips (optional)
Instructions
- Place cookie butter, banana and honey into a blender or container.
- Using a blender or handheld immersion blender, blend until smooth.
- If adding chocolate chips, stir into mixture.
- Divide evenly into popsicle molds. Place a popsicle stick in the middle.
- Place in freezer for an hour or two before enjoying.
Popsicles Flavors are Endless!
The types of popsicles you can make are almost endless. Just pull out what’s in your pantry or refrigerator and put it all together. For example, if you make morning smoothies, you can freeze those too for a quick, cool treat later in the day. I’ve done yogurt and fruit popsicles before and will be toying with other fruits too.
